清炖鱼汤

清洗鱼;用料酒和姜片腌鱼十分钟;

锅微热,用姜片均匀插锅底一会;

放入油七成热,放入花椒炒香,捞出花椒;

放入腌制好的鱼,中火炸鱼,两面均炸,表面变色盛出备用;

如果放少许油,放入姜片,胡萝卜翻炒;

加入几滴料酒,醋大火烧开;盖锅盖大火顿;

十分钟左右,汤汁开始变白;大火炖的过程中要注意水的量,如果水太少就在加入一点开水;
