肉末豆干炸酱

黄豆酱与甜面酱混合在碗里,搅匀;

锅里放入比平时炒菜多一倍的油,烧至温热时关火,放入葱姜先靠出香味;

放入所有的香料,开小火;

慢慢靠出香料的香味,捞出所有的材料不用,至留下油在锅里;

放入肉馅翻炒,继续用小火;

炒制肉馅变色,放入一勺料酒;

稍微炖煮一下,让酒精挥发掉,放入拌匀的酱;

翻炒均匀,放入豆腐干丁;

拌匀之后,放入一碗清水,小火慢炖,其中要不停的翻炒,以免糊锅;

大约30分钟左右,水分已基本靠干,酱也变得油光红亮,放入冰糖;

继续翻炒至糖融化,酱也更加浓稠,关火,盛出装入保鲜盒里,彻底放凉以后放入冰箱冷藏保存。


小窍门:
熬酱的时间长,酱的颜色越漂亮,中间要不停的翻炒,避免糊锅。加入豆干是吸收酱中的盐分。
